Batata e Carne Moída
Ingredients:
- 2 lbs ground beef
- 2 lbs potatoes, peeled and cut into cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the ground beef and cook until browned, about 5 minutes.
3. Add the potatoes, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine and cook for an additional 5 minutes.
4. Pour in the chicken broth and bring to a simmer. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, stirring occasionally.
5. Uncover the skillet and cook for an additional 5 minutes, or until the potatoes are tender.
6. Stir in the parsley and serve. Enjoy!
