BBQ Chicken and Rice Bowl
Ingredients:
- 2 chicken breasts
- 2 cups cooked white rice
- 1 lemon
- 1/4 cup barbecue sauce
- 1/2 cup diced tomatoes
- 2 cups salad greens
- 1/2 cup cooked beef
- 1/2 onion, diced
- 2 potatoes, diced
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts in a baking dish and season with salt and pepper. Squeeze the juice of the lemon over the chicken.
3. Bake for 25 minutes or until chicken is cooked through.
4. Meanwhile, heat a large skillet over medium heat. Add the diced potatoes and onion and cook until potatoes are tender, about 10 minutes.
5. Add the cooked beef and barbecue sauce to the skillet and stir to combine.
6. Add the cooked rice and diced tomatoes to the skillet and stir to combine.
7. To assemble the bowls, divide the cooked rice and beef mixture among four bowls. Top each bowl with a chicken breast and a handful of salad greens.
8. Serve and enjoy!
