Ingredients:
- 1 can of beans (any variety)
- 2 carrots, grated
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
- Fresh herbs for garnish (optional)

Instructions:
1. Rinse the beans under cold water and drain them well.
2. In a large bowl, combine the beans and grated carrots.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
4. Pour the dressing over the beans and carrots, and toss gently to coat.
5. Let the salad sit for about 15 minutes to allow the flavors to meld together.
