Beef and Broccoli Coconut Rice
Ingredients:
- 1 lb. of lean ground beef
- 2 cups of broccoli florets
- 2 cups of cooked white rice
- 1 can of coconut milk
- 1 cup of sliced mushrooms
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the ground beef and cook until it is browned, about 5 minutes.
3. Add the garlic and mushrooms and cook for an additional 2 minutes.
4. Add the broccoli and cook for an additional 3 minutes.
5. Add the coconut milk and stir to combine.
6. Add the cooked rice and stir to combine.
7. Season with salt and pepper to taste.
8. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
9. Serve hot. Enjoy!
