Make Beef and Mushroom Stuffed Bell Peppers

Ingredients:
- 1/2 lb ground beef
- 2 large bell peppers
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 cup mushrooms, chopped
- 1/2 cup cooked rice
- 1/2 cup tomato sauce
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- Shredded cheese for topping
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.
3. In a skillet, cook the ground beef over medium heat until browned. Add the diced onion and minced garlic, and cook until the onion is translucent.
4. Add the chopped mushrooms to the skillet and cook until they are softened.
5. Stir in the cooked rice, tomato sauce, dried oregano, dried basil, salt, and pepper. Mix well to combine all the ingredients.
6. Spoon the beef and mushroom mixture into the bell peppers, filling them to the top.
7. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.
8. Remove the foil, sprinkle shredded cheese on top of each stuffed bell pepper, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
9. Serve the beef and mushroom stuffed bell peppers hot, garnished with fresh herbs if desired. Enjoy your delicious meal!
