Make Beef and Potato Hash
Beef and Potato Hash
Ingredients:
- 2 tablespoons olive oil
- 2 large potatoes, peeled and diced
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 pound ground beef
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large tomatoes, diced
- 4 large eggs
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the potatoes, onion, and bell pepper to the skillet and cook, stirring occasionally, until the potatoes are golden brown and tender, about 10 minutes.
3. Add the ground beef to the skillet and cook, breaking it up with a spoon, until it is no longer pink, about 5 minutes.
4. Add the garlic powder, paprika, oregano, salt, and pepper and stir to combine.
5. Add the tomatoes and cook until they are softened, about 3 minutes.
6. Make four wells in the hash and crack an egg into each one.
7. Cover the skillet and cook until the eggs are cooked to your desired doneness, about 5 minutes.
8. Serve the hash warm with your favorite toppings. Enjoy!
