Beef and Potato Rice Bowl
Ingredients:
-1 cup of uncooked white rice
-1/2 lb ground beef
-1 small potato, peeled and diced
-1/2 cup diced tomatoes
-1/2 lb cooked chicken, diced
-1/4 cup of water
-Salt and pepper to taste
Instructions:
1. In a large pot, bring 2 cups of water to a boil. Add the rice and cook for 15 minutes or until the rice is cooked through.
2. In a separate pan, cook the ground beef until it is no longer pink. Drain off any excess fat.
3. Add the diced potato to the beef and cook for 5 minutes, stirring occasionally.
4. Add the diced tomatoes and cooked chicken to the beef and potato mixture and cook for an additional 5 minutes.
5. Add the cooked rice to the beef and potato mixture and stir to combine.
6. Add the water and season with salt and pepper to taste.
7. Simmer for 10 minutes or until the liquid is absorbed.
8. Serve the beef and potato rice bowl hot. Enjoy!
