Beef and Vegetable Lo Mein

Ingredients:

- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 celery stalks, sliced
- 2 carrots, sliced
- 1/2 pound roast beef, thinly sliced
- 8 ounces egg noodles
- 1/4 cup soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons chopped fresh cilantro

Instructions:

1. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic, bell peppers, celery, and carrots. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.

2. Add the roast beef to the skillet and cook until heated through, about 2 minutes.

3. Meanwhile, cook the egg noodles according to package instructions.

4. Add the cooked noodles to the skillet and stir to combine.

5. Add the soy sauce and sesame oil and stir to combine.

6. Cook until the noodles are heated through, about 2 minutes.

7. Sprinkle with the cilantro and serve.
