Beef and Vegetable Stir Fry

Ingredients:

- 1 large egg
- 1/2 cup all-purpose flour
- 1 large tomato, diced
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large carrot, diced
- 1 stalk celery, diced
- 1 small onion, diced

Instructions:

1. In a shallow bowl, whisk together the egg and flour until combined.

2. Add the diced tomato to the egg and flour mixture and season with salt and pepper.

3. Heat the olive oil in a large skillet over medium-high heat.

4. Add the ground beef to the skillet and cook until browned, about 5 minutes.

5. Add the carrot, celery, and onion to the skillet and cook until the vegetables are tender, about 5 minutes.

6. Pour the egg and flour mixture into the skillet and stir to combine.

7. Cook until the egg is cooked through and the vegetables are tender, about 5 minutes.

8. Serve the stir fry warm. Enjoy!
