Beef and Veggie Pasta

Ingredients:

-1 pound ground beef
-1 onion, diced
-1 carrot, diced
-1 green pepper, diced
-1 cup mushrooms, sliced
-1 can tomato paste
-1 can beef stock
-1 can diced tomatoes
-1 pound pasta of your choice

Instructions:

1. In a large pot, cook the ground beef over medium-high heat until browned.

2. Add the onion, carrot, green pepper, and mushrooms and cook until vegetables are softened, about 5 minutes.

3. Add the tomato paste, beef stock, and diced tomatoes and stir to combine.

4. Bring the mixture to a boil, reduce the heat to low, and simmer for 15 minutes.

5. Meanwhile, cook the pasta according to package instructions.

6. Once the sauce has simmered for 15 minutes, add the cooked pasta to the pot and stir to combine.

7. Serve the beef and veggie pasta hot. Enjoy!
