Make Beef and Yogurt Stew
Beef and Yogurt Stew
Ingredients:
- 2 pounds beef, cubed
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 2 cups beef broth
- 1 cup plain yogurt
- 2 tablespoons tomato paste
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and cook, stirring occasionally, until lightly browned, about 5 minutes.
2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
3. Add the cumin, coriander, paprika, turmeric, ginger, cinnamon, and cardamom and cook, stirring, for 1 minute.
4. Add the beef broth and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for 30 minutes.
5. Add the yogurt, tomato paste, and parsley and stir to combine. Simmer for an additional 10 minutes.
6. Taste and season with salt and pepper, if desired. Serve hot.
