Beef Mince and Potato Hash

Ingredients:

- 1 lb. ground beef
- 1/2 cup cherry tomatoes, diced
- 1/2 cup diced bacon
- 2 cups diced potatoes
- 2 tablespoons butter
- 1 egg
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large skillet over medium-high heat, cook the ground beef until browned, about 5 minutes.

3. Add the cherry tomatoes, bacon, and potatoes and cook until the potatoes are tender, about 10 minutes.

4. Transfer the mixture to a greased 9x13 inch baking dish.

5. In a small bowl, whisk together the egg and butter. Pour the mixture over the beef and potato mixture.

6. Bake in preheated oven for 25 minutes, or until the top is golden brown and the potatoes are cooked through.

7. Serve warm with a sprinkle of salt and pepper. Enjoy!
