Beetroot and Carrot Salad with Burrata

Ingredients:

- 2 large carrots, peeled and diced
- 2 large beetroots, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon honey
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- 1 ball of burrata

Instructions:

1. Preheat oven to 400°F.

2. Place the diced carrots and beetroots on a baking sheet. Drizzle with olive oil and season with salt and pepper.

3. Roast in the oven for 20 minutes, stirring halfway through.

4. In a small bowl, whisk together the honey and balsamic vinegar.

5. Remove the roasted vegetables from the oven and transfer to a large bowl. Drizzle with the honey and balsamic vinegar mixture and toss to combine.

6. Place the burrata in the center of a serving platter.

7. Arrange the roasted vegetables around the burrata.

8. Serve and enjoy!
