Beetroot and Strawberry Kale Pasta
Ingredients:
-1 cup of cooked pasta
-1 cup of cooked rice
-1 cup of chopped kale
-1/2 cup of chopped beetroot
-1/2 cup of chopped strawberry
-1/4 cup of Jamon, diced
-1/4 cup of all-purpose flour
-1/4 cup of milk
-1 egg
-1/4 cup of kefir
-1/4 of an avocado, diced
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, combine the cooked pasta, cooked rice, kale, beetroot, strawberry, Jamon, and flour.
3. In a separate bowl, whisk together the milk, egg, and kefir.
4. Pour the milk mixture over the pasta mixture and stir until everything is evenly combined.
5. Grease a 9-inch baking dish with cooking spray and pour the pasta mixture into the dish.
6. Top with the diced avocado and bake for 25 minutes.
7. Serve warm and enjoy!
