Bell Pepper and Egg Breakfast Burrito
Ingredients:
1 bell pepper, diced
2 eggs
1/2 avocado, diced
1/4 cup alfalfa sprouts
2 tortillas
1/4 teaspoon paprika
1/2 tomato, diced
Instructions:
1. Heat a large skillet over medium heat.
2. Add the bell pepper and cook for 3-4 minutes, stirring occasionally, until softened.
3. Crack the eggs into the skillet and scramble until cooked through.
4. Add the avocado, alfalfa, paprika, and tomato and stir to combine.
5. Divide the mixture between the two tortillas and roll up.
6. Serve warm. Enjoy!
