Chicken and Rice Stuffed Bell Peppers

Ingredients:

- 4 bell peppers
- 2 cups cooked white rice
- 2 cups cooked, shredded chicken
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese

Instructions:

1. Preheat oven to 375 degrees F.

2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.

3. In a large bowl, combine the cooked rice, chicken, onion, celery, carrots, garlic, Italian seasoning, paprika, salt, and pepper.

4. Add the chicken broth and Parmesan cheese and mix until combined.

5. Stuff the bell peppers with the chicken and rice mixture.

6. Pour 1/4 cup of chicken broth into the bottom of the baking dish.

7. Cover the baking dish with foil and bake for 30 minutes.

8. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the filling is hot.

9. Serve and enjoy!
