Berry Mascarpone Cake

Ingredients:

- 2 cups all-purpose flour

- 2 teaspoons baking powder

- 1/2 teaspoon salt

- 1/2 cup (1 stick) butter, softened

- 1 cup sugar

- 2 large eggs

- 1/2 cup mascarpone cheese

- 1/2 cup milk

- 2 cups fresh or frozen berries

Instructions:

1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.

4. Add the mascarpone cheese and mix until combined.

5. Alternately add the flour mixture and the milk to the butter mixture, beginning and ending with the flour mixture.

6. Gently fold in the berries.

7. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8. Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely. Serve with fresh berries and whipped cream, if desired. Enjoy!
