Bison and Sweet Potato Skillet

Ingredients:

-1 lb ground bison
-1/2 cup diced sweet potatoes
-1/2 cup diced potatoes
-1/2 cup green beans
-1/2 cup diced tomatoes
-1/2 cup chopped kale
-1 tablespoon mustard
-1/2 cup gluten free pasta
-Salt and pepper to taste

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the ground bison and cook until browned, about 5 minutes.

3. Add the sweet potatoes, potatoes, green beans, tomatoes, kale, and mustard. Stir to combine.

4. Reduce the heat to medium-low and cover the skillet. Cook for 10 minutes, stirring occasionally.

5. Add the gluten free pasta and stir to combine. Cover the skillet and cook for an additional 5 minutes.

6. Season with salt and pepper to taste. Serve warm. Enjoy!
