Bitter Gourd Chicken Stir Fry
Ingredients:
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 large tomato, diced
- 1 large bitter gourd, peeled and sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup fresh basil, chopped
- 1 pound boneless, skinless chicken breasts, cut into cubes
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the tomato, bitter gourd, salt, pepper, and red pepper flakes. Cook until the vegetables are tender, about 8 minutes.
4. Add the basil and chicken and cook until the chicken is cooked through, about 8 minutes.
5. Serve hot. Enjoy!
