Black Bean and Onion Casserole
Ingredients:
- 2 cans black beans, drained and rinsed
- 2 onions, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1/2 cup heavy whipping cream
- 1/2 cup shredded cheese
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook until onions are softened, about 5 minutes.
3. Add black beans, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes.
4. Transfer the black bean mixture to a 9x13 inch baking dish. Pour heavy whipping cream over the top and sprinkle with cheese.
5. Bake for 25 minutes, or until cheese is melted and bubbly. Serve warm.
