Black Bean and Tomato Salad
Ingredients:
-1 can black beans, drained and rinsed
-1 can diced tomatoes, drained
-1/4 cup chopped fresh cilantro
-1/4 cup olive oil
-2 tablespoons red wine vinegar
-1/2 teaspoon ground cumin
-Salt and pepper to taste
Instructions:
1. In a large bowl, combine the black beans, diced tomatoes, and cilantro.
2. In a separate bowl, whisk together the olive oil, red wine vinegar, and cumin.
3. Pour the dressing over the bean mixture and toss to combine.
4. Season with salt and pepper to taste.
5. Serve chilled or at room temperature. Enjoy!
