Veggie Rice Bowl
Ingredients:
-1 cup of uncooked rice
-1 can of black beans, drained and rinsed
-1 bell pepper, diced
-1 tablespoon of olive oil
-Salt and pepper to taste
Instructions:
1. Cook the rice according to package instructions.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the bell pepper and cook until softened, about 5 minutes.
4. Add the black beans and cook for an additional 2 minutes.
5. Add the cooked rice to the skillet and stir to combine.
6. Season with salt and pepper to taste.
7. Serve warm. Enjoy!
