Blueberry Pancakes
Ingredients:
-1 cup all-purpose flour
-1 tablespoon sugar
-2 teaspoons baking powder
-1/2 teaspoon salt
-1 cup milk
-2 tablespoons vegetable oil
-1 egg
-1/2 cup fresh or frozen blueberries
-Maple syrup, for serving
Instructions:
1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk together the milk, vegetable oil, and egg.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Gently fold in the blueberries.
5. Heat a large skillet over medium heat and grease with butter or cooking spray.
6. Drop 1/4 cup of batter onto the skillet and cook until the edges are set and bubbles appear on the surface.
7. Flip and cook until golden brown.
8. Serve with maple syrup. Enjoy!
