Braised Pork Ribs with Rice and Vegetables
Ingredients:
- 2 lbs pork ribs
- 2 cups uncooked long grain white rice
- 2 tablespoons vegetable oil
- 1 cup sliced shiitake mushrooms
- 1 cup diced carrots
- 1 cup frozen corn kernels
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons honey
- 2 cups chicken broth
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat oil in a large skillet over medium-high heat. Add pork ribs and cook until lightly browned, about 5 minutes.
3. Transfer pork ribs to a large baking dish.
4. In the same skillet, add mushrooms, carrots, corn, and garlic. Cook until vegetables are tender, about 5 minutes.
5. Add cooked vegetables to the baking dish with the pork ribs.
6. In a small bowl, whisk together soy sauce, oyster sauce, honey, chicken broth, and sesame oil. Pour over pork ribs and vegetables.
7. Cover baking dish with foil and bake in preheated oven for 1 hour.
8. Meanwhile, cook rice according to package instructions.
9. Once pork ribs are cooked through, remove from oven and season with salt and pepper to taste.
10. Serve pork ribs and vegetables over cooked rice. Enjoy!
