Ingredients:
- 1 whole rabbit, cut into pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

Instructions:
1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
2. Add the rabbit pieces and brown on all sides, about 5 minutes per side. Remove the rabbit from the skillet and set aside.
3. In the same skillet, add the chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
4. Add the diced tomatoes, chicken broth, dried oregano, dried thyme, salt, and pepper to the skillet. Stir to combine.
5. Return the rabbit pieces to the skillet, making sure they are submerged in the tomato sauce.
6. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 1 hour, or until the rabbit is tender.
7. Taste and adjust seasoning if needed.
8. Serve the braised rabbit in tomato sauce hot, garnished with chopped fresh parsley.
