Recipe Name: Braised Turtle with Potatoes

Ingredients:
- 1 turtle, cleaned and cut into pieces
- 2 potatoes, peeled and diced
- 2 tablespoons vegetable oil
- 3 slices of ginger
- 2 cloves of garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice wine
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 cups water

Instructions:
1. Heat vegetable oil in a large pot over medium heat. Add ginger slices and garlic, sauté until fragrant.
2. Add turtle pieces to the pot and brown on all sides.
3. Stir in soy sauce, oyster sauce, rice wine, sugar, salt, and pepper. Mix well to coat the turtle pieces.
4. Add diced potatoes and green onions to the pot. Pour in water until the ingredients are just covered.
5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the turtle meat is tender.
6. Taste and adjust seasoning if needed. Serve hot with steamed rice.
