Make Brazilian Chicken and Vegetable Rice Casserole

Ingredients:
- 1 cup of rice
- 1 chicken breast, diced
- 1 chayote (chuchu), peeled and diced
- 1 potato, peeled and diced
- 1 onion, diced
- 1 tomato, diced
- 1 cup of cooked black beans
- 1 carrot, peeled and diced
- 1 cup of shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil
Instructions:
1. Preheat the oven to 350°F (180°C).
2. In a large skillet, heat some olive oil over medium heat. Add the diced chicken breast and cook until browned on all sides.
3. Add the diced onion and cook until translucent.
4. Stir in the diced chayote, potato, tomato, carrot, and cooked black beans. Cook for a few minutes until the vegetables start to soften.
5. Season with salt and pepper to taste.
6. In a separate pot, cook the rice according to package instructions.
7. Once the rice is cooked, add it to the skillet with the chicken and vegetables. Mix everything together well.
8. Transfer the mixture to a baking dish and spread it out evenly.
9. Sprinkle the shredded mozzarella cheese on top of the mixture.
10. Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
11. Remove from the oven and let it cool slightly before serving.
