Breakfast Burrito
Ingredients:
- 4 large eggs
- Salt and pepper, to taste
- 2 cloves garlic, minced
- ¼ cup milk
- 2 potatoes, peeled and diced
- 1 teaspoon paprika
- 4 large tortillas
Instructions:
1. Preheat oven to 350°F.
2. In a medium bowl, whisk together eggs, salt, pepper, garlic, and milk until combined.
3. Heat a large skillet over medium-high heat. Add potatoes and cook until golden brown, about 10 minutes.
4. Add egg mixture to the skillet and cook until eggs are set, about 5 minutes.
5. Remove from heat and stir in paprika.
6. Place tortillas on a baking sheet and bake for 5 minutes.
7. Divide egg mixture among the tortillas and roll up. Serve warm.
