Broccoli and Carrot Navy Bean Stew

Ingredients:

- 2 cups navy beans, soaked overnight
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 2 carrots, diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup sour cream

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the broccoli, carrots, navy beans, vegetable broth, thyme, oregano, salt, and pepper.

4. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the beans are tender.

5. Remove from heat and stir in the sour cream.

6. Serve warm. Enjoy!
