Broccoli and Salmon Wheat Berry Bowl

Ingredients:

-1 cup cooked wheat berries
-1 cup cooked broccoli florets
-1/2 cup cooked salmon, flaked
-1/2 cup watercress
-1 tablespoon olive oil
-Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Place the broccoli florets on a baking sheet lined with parchment paper. Drizzle with the olive oil and season with salt and pepper. Roast for 15 minutes.

3. Meanwhile, cook the wheat berries according to package instructions.

4. In a large bowl, combine the cooked wheat berries, roasted broccoli, salmon, and watercress.

5. Drizzle with additional olive oil, if desired, and season with salt and pepper, to taste.

6. Serve warm. Enjoy!
