Buffalo Beef Pasta Bake


-1 lb ground beef
-2 eggs
-1/4 cup ketchup
-1 tbsp Dijon mustard
-1 cup diced tomatoes
-1/2 cup diced red onion
-1 tbsp honey
-1 cup cooked rice
-1/4 cup all-purpose flour
-1 cup shredded cheese
-1 can refried beans
-1 can black beans
-4 hamburger buns, toasted
-1/4 cup buffalo sauce
-1 can cream of mushroom soup
-1 tsp siracha
-1 tsp salt
-1 tsp spices of your choice
-1/4 cup heavy whipping cream
-1/4 cup milk
-1/2 cup cottage cheese
-1/4 cup sour cream
-2 cloves garlic, minced
-1 lb pasta of your choice


1. Preheat oven to 350°F.

2. In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.

3. In a medium bowl, whisk together eggs, ketchup, Dijon mustard, tomatoes, red onion, honey, and cooked rice.

4. Add the egg mixture to the skillet with the ground beef and cook until heated through.

5. In a separate bowl, mix together the flour, cheese, refried beans, black beans, toasted hamburger buns, buffalo sauce, cream of mushroom soup, siracha, salt, spices, heavy whipping cream, milk, cottage cheese, sour cream, and garlic.

6. In a large pot, cook the pasta according to package instructions. Drain and set aside.

7. In a 9x13 baking dish, layer the cooked pasta, beef mixture, and cheese mixture.

8. Bake for 30 minutes, or until cheese is melted and bubbly.

9. Serve warm. Enjoy!
