Buffalo Chicken Spinach Quesadillas

Ingredients:
2 chicken breasts, cooked and shredded
1 cup spinach, chopped
1/2 cup buffalo sauce
4 large tortillas
1/4 cup plain Greek yogurt
1/2 cup cooked meatballs, chopped
1/2 cup shredded cheese

Instructions:
1. Preheat a large skillet over medium-high heat.
2. Add the chicken, spinach, and buffalo sauce to the skillet and cook until the spinach is wilted and the chicken is cooked through, about 5 minutes.
3. Remove the skillet from the heat and set aside.
4. Place two of the tortillas on a clean work surface.
5. Spread the Greek yogurt over each tortilla.
6. Top each tortilla with half of the chicken and spinach mixture, followed by the chopped meatballs and shredded cheese.
7. Place the remaining two tortillas on top of the fillings.
8. Heat a large skillet over medium heat.
9. Place one of the quesadillas in the skillet and cook until the bottom is golden brown and the cheese is melted, about 4 minutes.
10. Flip the quesadilla and cook until the other side is golden brown, about 4 minutes.
11. Remove the quesadilla from the skillet and repeat with the remaining quesadilla.
12. Cut each quesadilla into four wedges and serve. Enjoy!
