Chocolate Coconut Cookies
Ingredients:
-1/2 cup butter, softened
-1/2 cup sugar
-1/2 cup cocoa powder
-1/2 cup shredded coconut
-1 teaspoon vanilla extract
-1 cup all-purpose flour
-1/2 teaspoon baking powder
-1/4 teaspoon salt
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add in the cocoa powder, shredded coconut, and vanilla extract and mix until combined.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
6. Using a cookie scoop, scoop the dough onto a parchment-lined baking sheet.
7. Bake for 10-12 minutes or until the edges are lightly browned.
8. Allow to cool before serving. Enjoy!
