Butter Nut Acorn Squash Stew
Ingredients:
- 2 tablespoons of butter
- 1 cup of chopped butter nut squash
- 1 cup of chopped sweet potato
- 1 cup of chopped onion
- 1 can of chick peas, drained and rinsed
- 1 cup of mixed vegetables (such as carrots, peas, corn, etc.)
- 2 cups of vegetable broth
- Salt and pepper to taste
Instructions:
1. In a large pot, melt the butter over medium-high heat.
2. Add the butter nut squash, sweet potato, onion, and chick peas to the pot and cook for 5 minutes, stirring occasionally.
3. Add the mixed vegetables and vegetable broth to the pot and bring to a boil.
4. Reduce the heat to low and simmer for 25 minutes, or until the vegetables are tender.
5. Season with salt and pepper to taste.
6. Serve hot. Enjoy!
