Butter Rice Salad
Ingredients:
- 2 cups cooked white rice
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup diced carrots
- 1/4 cup diced bell peppers
- 1/4 cup diced cucumber
- 1/4 cup diced tomatoes
- 1/4 cup diced olives
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine cooked rice and butter. Stir until butter is melted and evenly distributed.
2. Add olive oil, red onion, celery, carrots, bell peppers, cucumber, tomatoes, olives, parsley, and basil. Stir until all ingredients are evenly distributed.
3. Season with salt and pepper to taste.
4. Serve chilled or at room temperature. Enjoy!
