Butternut and Pepper Pie
Ingredients:
-1 sheet of puff pastry
-1 butternut squash, peeled and cubed
-2 bell peppers, diced
-1 tomato, diced
-1 avocado, diced
-1 onion, diced
-1/2 block of tofu, cubed
-1/2 lb of chicken, cubed
-1/2 lb of minced beef
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Place puff pastry in a 9-inch pie dish.
3. In a large bowl, combine butternut squash, bell peppers, tomato, avocado, onion, tofu, chicken, and minced beef. Season with salt and pepper.
4. Pour mixture into the puff pastry-lined pie dish.
5. Bake in preheated oven for 30 minutes, or until the puff pastry is golden brown and the filling is cooked through.
6. Let cool for 10 minutes before serving. Enjoy!
