Butternut, Carrot, and Chard Stew
Ingredients:
- 1 butternut squash, peeled, seeded, and cut into 1-inch cubes
- 2 carrots, peeled and cut into 1-inch cubes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chard, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups vegetable broth
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the butternut squash, carrots, salt, and pepper and cook for an additional 5 minutes.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat to low and simmer for 15 minutes.
6. Add the chard and cook for an additional 5 minutes.
7. Serve warm. Enjoy!
