Make Butternut Rice Omelette

Butternut Rice Omelette

Ingredients:

- 1 cup of cooked rice

- 1 cup of diced butternut squash
- 2 eggs
- 2 tablespoons of cream
- 2 tablespoons of plain yogurt
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. In a medium bowl, whisk together eggs, cream, yogurt, salt, and pepper.

3. In a medium skillet over medium heat, add the cooked rice and butternut squash. Cook for 5 minutes, stirring occasionally.

4. Pour the egg mixture into the skillet and stir to combine.

5. Cook for 5 minutes, stirring occasionally, until the eggs are cooked through.

6. Transfer the skillet to the preheated oven and bake for 10 minutes.

7. Serve the Butternut Rice Omelette warm. Enjoy!
