Ingredients:
- 8 oz wholewheat noodles
- 1 small butternut squash, peeled and diced
- 1 lb chicken breast, cooked and shredded
- 2 eggs
- 1 cup shredded cheese
- 1 onion, diced
- 2 cloves garlic, minced
- Salt to taste

Instructions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. Cook the wholewheat noodles according to package instructions, then drain and set aside.
3. In a large skillet, sauté the diced butternut squash, onion, and garlic until softened.
4. In a large bowl, whisk together the eggs and half of the shredded cheese. Season with salt.
5. Add the cooked noodles, butternut squash mixture, and shredded chicken to the bowl with the egg mixture. Mix well to combine.
6. Transfer the mixture to the greased baking dish and sprinkle the remaining shredded cheese on top.
7. Cover the dish with foil and bake in the preheated oven for 25-30 minutes.
8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
9. Let the casserole cool slightly before serving. Enjoy!
