Butternut Squash and Spinach Rice Bowl
Ingredients:
-1 cup uncooked white rice
-1 small butternut squash, peeled, seeded, and cubed
-2 potatoes, peeled and cubed
-2 cups fresh spinach
-2 tablespoons olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Spread the cubed butternut squash and potatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in preheated oven for 25-30 minutes, stirring occasionally, until vegetables are tender.
3. Meanwhile, cook the rice according to package instructions.
4. When the vegetables are done, add them to the cooked rice along with the spinach. Stir to combine.
5. Serve warm. Enjoy!
