Butterscotch Toffee Cookies

Ingredients:

- ½ c. cornstarch
- 1 ¾ c. all-purpose flour
- ½ c. powdered sugar
- 1 c. (2 sticks) unsalted butter, softened
- ½ tsp vanilla extract
- ¼ tsp salt
- ½ c. toffee bits
- ½ c. butterscotch chips, finely chopped

Instructions:

1. Preheat oven to 350°F.

2. In a medium bowl, whisk together cornstarch, flour, and powdered sugar.

3. In a separate bowl, cream together butter, vanilla extract, and salt until light and fluffy.

4. Gradually add the dry ingredients to the wet ingredients and mix until combined.

5. Fold in toffee bits and butterscotch chips.

6. Drop dough by rounded tablespoons onto a parchment-lined baking sheet.

7. Bake for 12-14 minutes, or until edges are lightly golden.

8. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
