Cabbage and Leek Fried Rice
Ingredients:
- 2 tablespoons olive oil
- 2 eggs, lightly beaten
- 1/2 head of cabbage, shredded
- 2 leeks, sliced
- 2 sweet potatoes, diced
- 2 tomatoes, diced
- 2 onions, diced
- 4 cloves garlic, minced
- 2 bay leaves
- 2 stalks celery, diced
- 2 cups cooked rice
- 1/2 pound beef, diced
- 2 tablespoons lime juice
- 1 teaspoon mustard
- 1/2 pound chicken, diced
- 2 slices bacon, diced
- 1/2 cup mozzarella cheese, shredded
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the eggs and scramble until cooked through.
3. Add the cabbage, leeks, sweet potatoes, tomatoes, onions, garlic, bay leaves, and celery to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
4. Add the cooked rice, beef, lime juice, mustard, chicken, and bacon to the skillet. Cook, stirring occasionally, until the beef is cooked through, about 5 minutes.
5. Reduce the heat to low and stir in the mozzarella cheese. Cook, stirring occasionally, until the cheese is melted and the dish is heated through, about 5 minutes.
6. Serve the cabbage and leek fried rice hot. Enjoy!
