Make Cajun Chicken and Rice
Cajun Chicken and Rice
Ingredients:
-1 lb. chicken breasts, cut into cubes
-1/2 cup Mexican cheese, shredded
-2 tablespoons Cajun seasoning
-2 tablespoons bourbon
-2 tablespoons soy sauce
-2 tablespoons teriyaki sauce
-2 cups cooked white rice
-2 potatoes, cut into cubes
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine chicken cubes, Cajun seasoning, bourbon, soy sauce, and teriyaki sauce. Mix until chicken is evenly coated.
3. Spread chicken cubes in a single layer on a baking sheet. Bake for 20 minutes, or until chicken is cooked through.
4. Meanwhile, in a large saucepan, bring 2 cups of water to a boil. Add potatoes and cook for 10 minutes, or until potatoes are tender.
5. Add cooked potatoes and cooked rice to the baking sheet with the chicken. Sprinkle with Mexican cheese.
6. Bake for an additional 10 minutes, or until cheese is melted and bubbly.
7. Serve hot and enjoy!
