Cajun Red Snapper with Sweet Potato Grits
Ingredients:
-2 red snapper fillets
-2 tablespoons avocado oil
-1 tablespoon cajun seasoning
-1 teaspoon smoked paprika
-1 tablespoon fig glaze
-1 tablespoon chopped parsley
-1 cup grits
-1 teaspoon white pepper
-1 cup heavy cream
-1 cup chicken broth
-1 whole roasted sweet potato
Instructions:
1. Preheat oven to 375 degrees F.
2. In a small bowl, mix together the avocado oil, cajun seasoning, smoked paprika, and fig glaze.
3. Place the red snapper fillets in a baking dish and brush with the oil and seasoning mixture.
4. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
5. Meanwhile, bring the heavy cream and chicken broth to a boil in a medium saucepan.
6. Add the grits and white pepper, reduce heat to low, and simmer for 10 minutes, stirring occasionally.
7. When the grits are cooked, stir in the roasted sweet potato and chopped parsley.
8. To serve, divide the grits between two plates and top with a red snapper fillet. Drizzle with the remaining fig glaze and serve. Enjoy!
