Cajun Salmon Bowl
Ingredients:
- 2 salmon fillets
- 2 cloves garlic, minced
- 1/4 cup diced pickles
- 1/4 cup diced onion
- 1 teaspoon cajun seasoning
- 1 cup cauliflower florets
- 1 cup cubed butternut squash
- 2 tablespoons sweet and sour sauce
- 2 tablespoons bbq sauce
- 1 cup cooked quinoa
Instructions:
1. Preheat oven to 375 degrees F.
2. Place salmon fillets on a baking sheet and season with cajun seasoning. Bake for 15 minutes.
3. Meanwhile, heat a large skillet over medium-high heat. Add garlic, pickles, and onion and cook until softened, about 5 minutes.
4. Add cauliflower and butternut squash and cook until tender, about 10 minutes.
5. Add sweet and sour sauce and bbq sauce and stir to combine.
6. To assemble the bowl, divide quinoa between two bowls and top with the vegetable mixture.
7. Top with the cooked salmon fillets and serve. Enjoy!
