Black Bean and Bell Pepper Burritos

Ingredients:

-1 can of black beans, drained and rinsed
-1 red bell pepper, diced
-1 jalapeno, diced
-1/2 teaspoon of cumin
-1/2 teaspoon of chili powder
-1/4 teaspoon of garlic powder
-1/4 teaspoon of onion powder
-Salt and pepper to taste
-4-6 flour tortillas
-Shredded cheese (optional)

Instructions:

1. In a medium bowl, combine the black beans, red bell pepper, jalapeno, cumin, chili powder, garlic powder, onion powder, and salt and pepper. Stir until all ingredients are evenly combined.

2. Heat a large skillet over medium heat. Add the black bean mixture and cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. Warm the tortillas in the microwave for 30 seconds.

4. To assemble the burritos, spoon a few spoonfuls of the black bean and bell pepper mixture onto the center of each tortilla. Top with shredded cheese, if desired.

5. Fold the sides of the tortilla over the filling and roll up.

6. Serve warm. Enjoy!
