Caprese Gnocchi in Air Fryer

Ingredients:
- 1 cup gnocchi
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella, diced
- Olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish

Instructions:
1. Preheat the air fryer to 400°F (200°C).
2. In a bowl, toss the gnocchi with a drizzle of olive oil, salt, and pepper until well coated.
3. Place the seasoned gnocchi in the air fryer basket in a single layer.
4. Air fry the gnocchi for 8-10 minutes, shaking the basket halfway through, until they are golden brown and crispy.
5. Remove the gnocchi from the air fryer and transfer to a serving plate.
6. Top the crispy gnocchi with cherry tomatoes and mozzarella.
7. Return the plate to the air fryer and air fry for an additional 2-3 minutes until the cheese is melted and bubbly.
8. Garnish with fresh basil leaves before serving.
