Caprese Linguine
Ingredients:
- 8 ounces of linguine
- 1 pint of cherry tomatoes, halved
- 8 ounces of mozzarella, cubed
- 1 zucchini, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant, about 1 minute.
3. Add the cherry tomatoes and zucchini to the skillet and cook until the vegetables are tender, about 5 minutes.
4. Add the cooked linguine to the skillet and toss to combine.
5. Add the mozzarella and balsamic vinegar and toss to combine.
6. Season with salt and pepper to taste.
7. Serve the Caprese Linguine warm. Enjoy!
