Make Caribbean Jicama Bowl
Caribbean Jicama Bowl
Ingredients:
-1 jicama, peeled and cut into cubes
-1/2 pound of salmon, cut into cubes
-1 lime, juiced
-1 plantain, sliced
-1/2 cup of fresh coconut, shredded
-1/4 cup of red onion, diced
-1 hot pepper, diced
-1 mango, diced
-1 apple, diced
-1/2 pound of shrimp, peeled and deveined
-1/2 cup of pineapple, diced
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the jicama cubes on a baking sheet and bake for 15 minutes.
3. Meanwhile, heat a large skillet over medium-high heat. Add the salmon cubes and cook for 5 minutes, stirring occasionally.
4. Add the lime juice, plantain slices, coconut, red onion, hot pepper, mango, apple, shrimp, and pineapple to the skillet. Cook for an additional 5 minutes, stirring occasionally.
5. Remove the jicama cubes from the oven and add them to the skillet. Cook for an additional 5 minutes, stirring occasionally.
6. Serve the Caribbean Jicama Bowl warm. Enjoy!
