Caribbean Salmon and Oyster Bowl
Ingredients:
- 1 lb. salmon fillet, cut into cubes
- 1/2 lb. oysters, shucked and chopped
- 2 tablespoons sumac
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons lime juice
- 2 carrots, peeled and diced
- 1/2 cup corn kernels
- 2 tablespoons apple cider vinegar
- 1/2 cup diced pineapple
- 1 teaspoon yeast
- 1/2 lb. ground beef
- 1 tablespoon tomato paste
- 1 tablespoon maple syrup
- 1 teaspoon chili powder
- 1 teaspoon Chinese five spice
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large bowl, combine salmon cubes, oysters, sumac, salt, pepper, and lime juice. Mix until evenly combined.
3. Spread the salmon and oyster mixture onto a baking sheet lined with parchment paper. Bake for 15 minutes.
4. Meanwhile, heat a large skillet over medium-high heat. Add carrots, corn, apple cider vinegar, pineapple, yeast, ground beef, tomato paste, maple syrup, chili powder, and Chinese five spice. Cook, stirring occasionally, until vegetables are tender and ground beef is cooked through, about 10 minutes.
5. Divide the salmon and oyster mixture among four bowls. Top each bowl with the cooked vegetable mixture. Serve warm. Enjoy!
